Our Thai Green Curry is a simple, gently spiced dish made with chicken, vegetables, and coconut milk, served alongside rice. The flavours are mild and balanced, with the focus on soft textures and familiar ingredients. It can be served mixed together or with elements kept separate, making it easy to adapt for different ages and preferences at the table.

How to Make Our Thai Green Chicken Curry

  1. Cook the rice according to packet instructions. Drain and keep warm.

  2. Heat the sunflower oil in a large pan over a medium heat.

  3. Add the onion and peppers and cook for 5 minutes, until softened.

  4. Add the diced chicken and cook for 5–7 minutes, stirring, until lightly browned.

  5. Stir in the curry spices, garlic powder, and ground ginger. Cook for 1–2 minutes until fragrant.

  6. Pour in the coconut milk and bring to a gentle simmer.

  7. Add the broccoli and peas, then cook for 8–10 minutes, until the chicken is cooked through and vegetables are tender.

  8. Taste and adjust consistency with a splash of water if needed.

  9. Serve the curry with the cooked rice, either layered or side‑by‑side.

  • Listening to the sounds of simmering and stirring
  • Smelling the coconut milk or curry when cooled slightly 
  • Exploring safe whole vegetables, such as broccoli or peppers, with close supervision

  • Help rinse rice before cooking
  • Watch how the curry changes colour when coconut milk is added
