Our Apple and Courgette Tray Bake is a comforting, lightly sweet bake that’s perfect for sharing at home. Combining naturally sweet apple with mild courgette, it’s a clever way to include fruit and vegetables in a soft, child‑friendly sponge. Ideal for snacks, lunchboxes, or relaxed family teas, this simple bake supports balanced eating while still feeling like a treat.

How to Make Our Apple & Courgette Tray Bake

  • Preheat the oven to 180°C (160°C fan). Line a small rectangular baking tin or a standard loaf tin.

  • In a large bowl, mix together the self‑raising flour and baking powder.

  • In a separate bowl, whisk together the plant‑based milk, sunflower oil, and vinegar.

  • Grate the apple and courgette. Gently squeeze out excess moisture using clean hands or a tea towel.

  • Stir the grated apple and courgette into the wet ingredients.

  • Pour the wet mixture into the dry ingredients and gently fold together until just combined. Do not over‑mix.

  • Spoon the mixture into the prepared tin and smooth the top.

  • Bake for 35–40 minutes, until lightly golden and a skewer inserted into the centre comes out clean.

  • Leave to cool in the tin for 15–20 minutes, then slice and serve.

Serving Tip

  • Slice into smaller pieces for younger children or larger slices for adults.

  • Keeps well for 2–3 days in an airtight container.

  • Can be served plain or with fruit on the side.

  • Exploring the textures of safe whole ingredients with close supervision (for example, feeling a whole apple or courgette).
  • Explore the finished bake through touch and taste.
