Sweet and Sour Vegetables and Butter Beans


400g Cauliflower
100g Onions
10g Garlic
200g Mixed Peppers
8 Pineapple Slices
800g Chopped Tomatoes
10ml Sunflower Oil
100g Carrots
500g Butterbeans


Cut cauliflower into small pieces
Peel and dice onions
Peel and crush garlic
Dice peppers
Chop pineapple into small chunks and keep the juice
Peel and dice carrots


  1. In a sauce pan heat oil and add onions, garlic, carrots and peppers and cook for 4-5 minutes
  2. Add cauliflower, chopped tomatoes and pineapple pieces and juice
  3. Bring to the boil then add butter beans and turn down to a simmer to cook out
  4. Allow to thicken before serving
