Parsnip, Apple and Lentil Soup with Wholemeal Pitta

Ingredients:

500g Parsnips
150g Onions
10g Garlic
10ml Sunflower Oil
100g Red Lentils
500g Apple
1l Water
5 Pitta Breads

Preparation:

1. Cut parsnips into approximately 2cm pieces
2. Peel and dice onion
3. Peel and crush garlic

Method:

1. In a thick-bottomed saucepan, heat oil and fry onion, parsnip and garlic for 5-10 minutes
2. Add lentil and continue to cook for a further 5 minutes
3. Add apples and water and bring to the boil then turn down to simmer
4. Allow for lentils to cook and parsnips to soften before blending
5. Serve with half a pitta bread
