Winter Vegetable Chilli


75g White Onion

1 spoonful of Vegetable Oil

10g Mixed Herbs

5g Hot Chilli Powder

312g Red Kidney Beans

800g Chopped Tomatoes

1g Ground Black Pepper

100g Tomato Pureé

125g Sweetcorn

125g Sliced Mixed Peppers

125g Courgette

1 clove of garlic, finely chopped

Vegetable Stock


1. Heat oil in a saucepan and add the copped onions and garlic

2. Add chopped vegetables, chilli powder and kidney beans

3. Add tomatoes, tomato pureé and vegetable stock. Bring to the boil.

4. Simmer for 30 minutes

5. Serve
