Bean and Vegetable Pilaf


100g Fresh Leeks

5ml Vegetable Oil

100g Button Mushrooms

80g Onion

80g Red Pepper

80g Green Pepper

400g Chopped Tomatoes

400g Baked Beans

1/4tsp Ground Cumin

300g Rice

600ml Water

100g Red Kidney Beans


1.Heat oil in pan

2.Slice leeks, onions, mushrooms and peppers and cook in pan for 2 mins.

3.Stir in Cumin and dry rice

4.Add chopped tomatoes, stock and water

5.Bring to boil, cover and cook gently for 30 mins

6.Stir in baked beans and kidney beans
