Vegetarian Stir Fry with Noodles

Ingredients

400g Quorn Pieces

75g Tomato Paste

20g Demerara Sugar

5ml Dark Soy Sauce

100ml Orange Juice

10ml Sunflower Oil

40g Onions

100g Beanshoots

100g Mange Tout

1 Red Pepper

1 Green Pepper

1 Yellow Pepper

50g Baby Corn

100g Spinach

400g Medium Egg Noodles

1l Water

Method

1. Mix together the tomato puree, demerara sugar soy sauce and orange juice in a large roasting pan.

2. Add Quorn pieces and roast at 180°C/350°F/Gas Mark 4 for 20 minutes until cooked through.

3. Heat oil in a large pan and add the prepared vegetables (that have been washed and chopped into bite size pieces) - but not the spinach.

4. Cook for 5 minutes.

5. Meanwhile cook noodles in boiling water as per packet instructions.

6. Remove Quorn from oven and stir in spinach and vegetables.

7. Once cooked drain noodles and top with Quorn mixture and pour over remaining juices.

8. Serve immediately.
