Carrot Cake


100g Margarine

200g Plain Flour

40g Demerara Sugar

1tsp Baking Powder

200g Carrots

2 Medium Eggs

1/2tsp Vanilla Flavouring

1 1/2 Large Oranges


1. Cream together margarine and sugar, add eggs gradually so they do not curdle, if it looks as though they may then add one spoonful of flour.

2. Wash oranges. Grate and add orange zest and juice from 1 1/2 oranges.

3. Peel and grate carrots.

4. Add with flour, baking powder and vanilla essence, fold in gently until all ingredients are combined.

5. Pour into a full size tart tin and bake in a moderate oven on the lower shelf for approximately 30 minutes or until cooked.

6. Leave to cool.

7. Serve.
