360g Cous Cous
450ml Water
500g Chicken Breast
3 Red Peppers
170g Tomatoes
1tsp Coriander
1tsp Parsley
1/2 Cucumber
1tbsp Extra Virgin Olive Oil
1.Cook chicken.
2.Boil water and pour over the couscous in a bowl.
3. Cover with cling film and leave to stand for 5 minutes or until all the water has been absorbed.
4. Meanwhile chop the remaining ingredients.
5. When couscous is ready fluff with a fork and stir in chop chicken.vegetables,herbs and olive oil.
6. Chill and serve.
