Mexican Beef Chilli


500g Beef Mince
200g Onions
20g Fresh Garlic
1600g Chopped Tomatoes in Tomato Juice
200g Carrots
10g Mild Chilli Powder
400g Mixed Peppers
400g Red Kidney Beans in Water
10ml Sunflower Oil


1. Peel and dice onions
2. Peel and crush garlic
3. Peel and dice carrot
4. Dice pepper
5. Drain and wash kidney beans


1. In a saucepan, heat oil and cook mince until brown
2. Add onion, garlic and carrot and cook for 4-5 minutes
3. Add chilli powder, peppers and chopped tomatoes, and bring to the boil
4. Add kidney beans then turn down to simmer and cook until tender
