Caribbean Quorn and Pineapple


800g Quorn pieces

100g Large Onions

10g Fresh Garlic

200g Diced Mixed Peppers

8 Pineapple Slices

800g Chopped Tomatoes in Tomato Juice

5g Ground Cinnamon

5g Paprika

10g Coriander

10ml Sunflower Oil

100g Carrots


1 Peel and dice the onion and carrots
2 Peel and crush the garlic
3 Dice the pineapple and keep the juice
4 Chop the coriander


1 In a sauce pan heat oil and add onions, garlic, carrots and peppers and cook for 4-5 minutes
2 Add the Quorn pieces, paprika and cinnamon and mix well before adding chopped tomatoes, pineapple pieces and juice
3 Bring to the boil and turn down to a simmer to cook out
4 Before serving, add the chopped coriander
